The German Food Codex Commission has updated the guidelines for bread and small baked goods. Key changes include clarification of how ingredient percentages are calculated, the option to combine trade names, and more precise product descriptions for items such as toast bread, sandwich bread, baguettes and bagels. In addition, references to current legislation and protected geographical indications have been updated.
